The point of these programs is to increase strength and flexibility, which helps to promote stable and safe mobility, as well as individual independence. Typical exercises include armchair aerobics and resistance band training. We emphasize and encourage a healthy lifestyle, including exercise, to enable adults to live independently and in the living arrangement of their choice. Here is the recipe for Phyllis Tillinghast’s Yam Jam muffins: Heat oven to 375 degrees F. Coat 2- 12 cup standard muffin tins with oil spray. Set aside. (A) In a small bowl combine and set aside: 1-8 oz package of cream cheese 1 egg 3 Tbsp sugar |
(B) In a 2nd small bowl combine and set aside: 5 Tbsp sugar½ cup flour 1/3 cup chopped pecans ½ tsp cinnamon3 Tbsp. melted butter |
(C) In a large mixer bowl mix: 2 cups sugar 2 cups flour ½ tsp salt 2 tsp baking powder ½ tsp baking soda 2 tsp cinnamon Add 1-40 oz can drained yams. Mix well with mixer. |
Beat together: 2 eggs
2 tsp. vanilla 1/3 cup vegetable oil Add to yam batter in large mixer bowl. Mix only until blended –there will be some lumps. Scoop batter (C) into the bottom of each muffin cup. A medium scoop works well for this. |
Put a scant Tbsp of the cream cheese mixture (A) from your first bowl on top of the batter and then 1 tsp of the jam of your choice. Top with another scoop of batter (C) and a Tbsp of the streusel mixture (B) from the second bowl you set aside. Bake at 375 degrees for 20-25 minutes or until a toothpick inserted in the center of the muffin comes out clean. Cool on wire racks. |
